I grew up watching Nutella ads asking, “what world will be without Nutella?”. Well, I got no answer for that, but I much prefer the one with it!
Love this chocolate spread, but the idea to have it with just whipped cream did not sit very well with me. I then remembered a childhood dessert, that I loved, and my mother was quite happy for me to eat. It was whipped ricotta cheese with sugar and cocoa powder.
Below is the result! An absolute success, creamy reach and indulgent mousse, with the taste of Ferrero Rochers but with less fat as is 30 % ricotta cheese
Give it a go and it will soon be a family and friends favourite. Also I forgot to mention it takes 10 minutes to make… no brainer!
what makes nutella mouse low fat?
I set to work in order to create a lower in fat but with all the creaminess expected from a Nutella mousse.
Using ricotta cheese instead of only cream or mascarpone cheese makes all the difference. Did you know ricotta has only 10% fat on average! Ricotta is Italian cheese curd made from whey left over from production of other cheeses. Its creamy texture makes it super easy to use for desserts like mouse and cheesecake.
Ricotta is loaded with protein which supports muscle growth and helps lower blood pressure!

What do i need to make nutella mouse?
3 main ingredients: Nutella of course…. ricotta cheese and whipping cream.
Optional garnish: chopped hazelnuts and raspberries.
If you are not keen on raspberries feel free to use strawberries, blueberries or any other fruit you really like. I just think red berries pared with chocolate work wonders in your pallet!
Let's get making nutella and ricotta mouse!
Place the ricotta cheese in a large sieve, add the caster sugar and sieve into a large bowl pushing through with a silicon spatula.
Repeat this process at least 4 times, until the sugar has dissolved, and the ricotta is smooth and velvety.
Warm up the Nutella for 30 seconds in a microwave or dipping the jar in hot water for a few minutes.
Pour the whipping cream in a separate bowl and whisk to a soft peak, do nor over whisk
Then, pour the softened Nutella and ½ of the chopped hazelnuts into the ricotta and mix well. Then add the cream in two stages, folding it in. try to retain as much air as possible.
Spoon the mousse in the serving glasses and garnish with the remaining chopped hazelnuts.
Store the nutella mousse in the fridge for about 10 minutes to cool down the nutella.

- 200 g Nutella
- 100 g Chopped hazelnuts
- 15 g Caster sugar
- 5 each Raspberries
Instructions

HINT AND TIPS:
It is very important to sieve the ricotta several times and whip the cream to a soft peakUse a piping bag to fill the glasses for a neater result
