Italian Salsa Verde is a raw green sauce which is fantastic companion for your BBQ, grilled fish or meat dishes. So easy and simple to make, will take only 5 minutes and you will never buy it again in the supermarket. Made with parsley, anchovies, capers, mint, garlic and olive oil. In fact this dressing will add refreshing taste to your dish, you can even use it as a dipping sauce for raw or grilled vegetables.
Salsa Verde in Italy has originated from the Piedmont region, where was served as a condiment for the “Bollito Misto” (a typical dish of mix boiled cuts of meats). Since then it has evolved with the addition of other herbs, bread, and egg yolk to enrich this aromatic sauce to accompany a wider range of dishes. However, I stuck with the recipe passed on in my family.
How long does Salsa Verde dressing last?
This raw salsa dressing will last at least one week in the fridge if stored in a airtight container or covered with cling film pressed down on the surface to avoid oxidation.
What do you eat with Salsa dressing ?
Boiled, grilled or roasted meats, fish, vegetables, really any dish that you want to pimp up. Why not try it with breaded pork escalopes or perhaps use it as a sauce in your shrimp burger?!

Ingredients:
- 60 ml Extra Virgin Olive Oil
- 15 g Parsley
- 10 g Anchovies
- 10 g Capers
- 10 g Mint
- 5 g Garlic
- Salt and Pepper to taste

Method:
1 In the blender add garlic, anchovies, capers, parsley, mint, olive oil and seasoning
2 Blend for a few minutes until smooth
3 Serve and enjoy!
HINT AND TIPS:
If using salted capers, then add a splash of white vinegar for acidity.
Taste for seasoning, but usually anchovies and capers are enough to season the sauce.
In case the sauce appears a little dry, just add a few spoons of olive oil to achieve desired texture.
