This is a fantastic apple pecan chicken salad with apples, celery and edamame beans. Full of flavour and super nutritious this chicken salad with apples will be perfect as a pick-nick food during the summer months. In fact, is so good that you will roast the chicken on purpose.
Can I use different nuts in the chicken and apple salad?
Of course, in fact whole nuts are perfect, but any nuts will do the job. All you want is to add a crunch and texture to the salad. If you are allergic or you do not like nuts, then substitute with crunchy croutons.
I don’t have any chicken, what can I use instead?
This salad will work with cured meats like smoked ham, Bresaola or Parma ham. You can also use leftovers of roast lamb and roast beef.
Can apple pecan chicken salad be eaten cold?
I prefer to serve this salad at the room temperature, however it is up to your preference. If you are roasting a chicken for the salad, you will have to wait until the chicken is at room temperature before you pull the meat apart. Using leftover chicken from the night before straight from the fridge will also work.

Let's make chicken and apple salad
Ingredients
- Roasted chicken ½ or 300 g meat
- Green or red apples 2 300 g
- Celery ½ 200 g
- Edamame soya beans 200 g
- Pecans nuts 100 g
- Lemon ½ juiced
- Mayonnaise 3 tablespoons
- Salt and Pepper to taste
Method
1 Pull the chicken meat off the bones and place into a large bowl. Thinly slice the apples removing the cores and add to the chicken. Add sliced celery, use the core leaves as well if available and place in the bowl. Now add the pecans nuts and the edamame soya beans. All is left now, dress the salad with the lemon juice and the mayonnaise, season with salt and pepper and serve!
