Epic Parmesan crusted asparagus you need to try

Parmesan crusted asparagus is a simple recipe that showcases my favourite vegetable. Every year, coming spring I keep looking out for local asparagus, and then… Bang here they are!

I know that they will stay for a few weeks only, so let’s not waste any time! Roast them, grill them, shave them raw into salads and put them into soups.

I know you can get imported asparagus, some of which are good quality, but you can not beat the freshness of locally produced ingredients.

Why are my asparagus mushy?

Asparagus are delicate fibrous vegetables, if cooked for to long in water (boiling) or even steamed, they will absorb liquid. Try roasting them in the oven for a crispy result.

How do I trim my asparagus?

Some people try to guess the point where the tender part start and cut them the knife. A faster and better way is to snap them.

This way is so easy, in fact is a great way to involve the kids in cooking, just show them one and they will enjoy snapping the rest. Our daughter loves helping out in the kitchen! 

The tips (tender part) can be used in any recipe, but do not discard the storks, they are great in soups.

Let's make Parmesan crusted asparagus

Ingredients:

  • 500 g Asparagus
  • 10 g Grated parmesan
  • 10 ml Olive oil 2 tablespoons
  • Salt and Pepper to taste

Method

  1. Snap the asparagus, place the tips in a non-stick baking tray.
  2. Drizzle with olive oil and season with salt and pepper.
  3. Roast in a preheated oven for 10-12 minutes, shaking the tray about halfway through.
  4. Cover with the grated Parmesan as soon as they are out of the oven, the Parmesan will slightly melt and crisp up on top. 

That’s it,  now you are ready to serve Parmesan crusted asparagus! We recommend a few dishes which could go well with this side dish – breaded pork escalopes, for fish lovers swordfish involtini and of course for pasta lovers – Pasta frittata!  Fish of your meal with crazy good polenta cookies!

Ingredients

  • 500 g Asparagus
  • 10 g Grated parmesan

Instructions

  • Snap the asparagus, place the tips in a non-stick baking tray.
  • Preheat the oven to 180 C
  • Drizzle with olive oil and season with salt and pepper.
  • Roast in a preheated oven for 10-12 minutes, shaking the tray about halfway through.
  • Cover with the grated parmesan as soon as they are out of the oven, the parmesan will slightly melt and crisp up on top.

HINT AND TIPS:
To make sure they are cooked, pinch the thicker part of the asparagus, if they feel soft, then they are ready for the Parmesan.
Ideally serve hot, but they are really good cold as well.
