Green beans in Marinara sauce is a fantastic side dish to your meat, fish or vegetable dishes. Such a  simple fagiolini recipe and  easy to make, green bean in tomato sauce with anchovies, oregano, garlic are a gluten free, dairy free and a great accommodation for your dinner table.  

There are so many ways you can cook green beans, sometimes it can get boring. Nevertheless, there is nothing boring about this fagiolini recipe!

Added kick from Marinara sauce it will take your pallet to a different dimension. 

Anchovies is a secret ingredient in Marinara sauce which are full of Omega 3, they are the good fats in our body. Besides it is introduced in this side dish in natural way without a need of taking any supplement of vitamins. 

Along with green beans which are full of vitamins and minerals is a great example of Mediterranean diet! Why not serve your side dish of green beans along side with Panzanella salad or Spaghetti alle Vongole !

Ingredients for Green Beans in tomato sauce

easy fagiolini recipe with tomato sauce, anchovies, oregano and garlic
  • Green beans 300 g
  • Tomato passata 50 g
  • Anchovies fillets under oil 6 g (4 individual fillets)
  • Oregano 2 g
  • Garlic 5 g (1 cloves)
  • Olive oil 5 ml
  • Salt and pepper to taste

Necessary Tools 

  • Pairing knife
  • Chopping board
  • Silicon spatula
  • Strainer or colander 
  • Large Pan
  • Medium Pan

Method 

Put a pan of salted water on medium heat to blanch the green beans, meanwhile


Marinara Sauce 

  1. In a cold frying pan place the thinly sliced garlic, anchovies and olive oil
  2. Place on moderate heat and cook until the anchovies have melted, and the garlic is golden
  3. To help the anchovies melt, stir them gently in the oil with a silicon spatula
  4. Then add the tomato passata and oregano, do not season yet as the anchovies might be enough
  5. Cook for a couple of minutes, then taste and adjust the seasoning

By now the water should be boiling

  1. Trim the ends of the beans
  2. Place green beans in the salted boiling water, the timing will depend on the size
  3. Generally it will take between 2 and 4 minutes
  4. Remember we are looking for a soft firm texture
  5. Drain in a colander and rest for 1 minute, to extract all the water and steam
  6. Add the beans to the sauce
  7. Sauté until all beans are evenly coated in the sauce, plate and serve hot or even at room temperature

Cooking timing for this  fagiolini recipe should be only take 15 minutes!

Hints and Tips

The green beans should be al dente (cooked but with a crunchy bite still).

Do you have your favourite passata, I recommend passata Mutti number 1 brand in Italy for tomato sauce used in professional kitchens. The taste is just incredible with low acidity and pure quality, try it for yourself and click on the link above.

If using anchovies under salt, rinse under cold water removing the salt before use otherwise your sauce might be too salty!

Make sure the garlic is golden, if too dark will give a bitter taste to the dish.
