Homemade gnocchi remind me of my childhood. I still remember waking up on a Sunday, walking downstairs for breakfast and finding my mother cutting potato gnocchi on the kitchen table. Now that’s what I call a good start of the day!

What potatoes are best for Gnocchi?

The secret to good fluffy gnocchi is to pick the right potatoes. The main factor is to pick dryer potatoes, with a lower water content. Naturally, Russet potatoes are performing well, but if you can not find them, then look for a white potato, ideally a bit old looking, they will be simply fine.

You should try our Sicilian Caponata or Parmesan crusted Asparagus. Serve it as a side to your homemade gnocchi or a starter, what about some green beans in marinara sauce?

What sauce should I use with Gnocchi?

Potato gnocchi have a delicate potato taste. Therefore, they can be dressed in many different sauces, from a delicate basil pesto to a meaty Bolognese, even a strong four cheeses sauce will work really well. Do you want to try something different? Try our Zucchini Pesto!

Let's make Homemade gnocchi together!

Ingredients: 

  • 1 Kg potatoes
  • 200 g Flour
  • 1 Egg
  • 2 g (1/2) nutmeg
  • Salt and Pepper to taste

Method

1 Place the potatoes (skin on) into a large pan of salted boiling water, cook until you can pierce with a fork. Depending on the size of the potatoes, this will take between 30 and 45 minutes.

2 Carefully, one by one, take the potatoes out of the water and peel them before passing them through a ricer on the work surface. Is important that the potatoes are still hot at this point, to let as much humidity out.

3 Create a well in the middle, add the egg, flour and grated nutmeg.

4 Working with a spoon or a fork first, then with your hand gather the dough together and mix until you obtain a uniform mass.

5 Cover with cling film and rest for ten minutes

6 Cut the dough into smaller pieces. Lightly flour the work surface and roll the though into a rope about 2 cm in diameter

7 using the scraper, or a knife, cut the rope 2 cm apart and gently flour.

8 Once all the gnocchi cubes are cut, in other to form the symbolic ridges, pressing gently with your thumb, roll them against the floured fork tines.

9 To cook the gnocchi, drop them into salted boiling water, once they are coming up to the surface, they are cooked. Using a spider, lift them up and place in your chosen sauce.

HINT AND TIPS:

If you want to freeze part of your gnocchi, just lay them in a parchment covered tray and place in the freezer. Once hard, they can be bagged.
