How to make the best sweet and tangy Italian zucchini!

In this Italian zucchini recipe you will learn how to make a very delicious side dish in 15 minutes. 

Courgettes have many health benefits – they are rich in nutrients and antioxidants, contribute to healthy digestion. Additionally courgettes may reduce your blood sugar, may improve heart health, strengthen your vision and may even aid weight-loss.

Do I peel Zucchini? 

I generally recommend to keep the skin on as it contain a lot of vitamins and antioxidants. The only thing to watch out for: if the skin was waxed to prolong the shelf life of the vegetable, it is not uncommon. Peal courgettes if you are planning to add them to salad and consume them raw. Do not peal the skin if you are using courgettes for cooking as all the bacteria and wax will dispensary during the cooking process.

Zucchini side dish is so quick and simple to make, you can have this amazing vegetarian side dish with any meat or fish main dishes. Courgettes are naturally sweet and many children will love them too. 

Many chefs concentrate on giving you the main dishes like fish or meat, I feel like sometimes the essentials are being forgotten by overpowering main dishes. I really wanted to focus on many beneficial to health and easy to make side dishes which could be used in variety.

Let's make Italian zucchini!

Italian zucchini ingredients
Start with 800 g of courgettes, olive oil, garlic, mint, sugar and red wine vinegar for sweet and tangy taste. 
Don’t forget to taste the dish when cooking and adjust seasoning as required. 

 

How to Make Courgette side dish in under 15 minutes!

 

  1. Slice the courgettes about ½ cm thick
  2. Pour the oil in a large frying pan or skillet, heat up and place the sliced courgettes inside
  3. Season lightly and cook on a lively heat for about 5 minutes steering regularly with a silicon spoon
  4. Once the courgettes are soft and golden drizzle the sugar and let caramelise for a few seconds before adding the vinegar and mint
  5. Evaporate half of the vinegar
  6. Switch off the heat, taste and adjust seasoning, serve

Notes

HINT AND TIPS:

Steer regularly but gently as once the courgettes will start to soften, they will tent to break

    In summer courgettes are so abundant and a really good recipe is always a great thing. Especially to add extra veggies to our dinner. My kids indeed love courgette so I’m sure they’re gonna love this.

    I’m always looking for warm side recipes and this is perfect. I’m with you, I keep the skin on zucchini most of the time too. Also, kind of keeps the vegetable in tact once I put it through a cooking process. Love how you used mint with this dish. Would never have thought to use the 2 ingredients together. Yum!
