No Chicken for Your Insalata di Pollo? No Problem!

If you’re out of chicken, don’t worry. This versatile Insalata di Pollo can be prepared with various cured meats like smoked ham, Bresaola, or Parma ham. Leftover roast lamb or beef also works wonderfully.

Can the Apple Pecan chicken salad be eaten cold?

I personally love serving this Insalata di Pollo at room temperature. However, it’s all about your preference. If you’re using freshly roasted chicken, let it cool to room temperature before shredding. Leftover chicken straight from the fridge is also a great option. Let's make chicken and apple salad

Ingredients 

  • Roasted chicken ½ or 300 g meat
  • Green or red apples 2 300 g
  • Celery ½ 200 g
  • Edamame soya beans 200 g
  • Pecans nuts 100 g
  • Lemon ½ juiced
  • Mayonnaise 3 tablespoons
  • Salt and Pepper to taste

Method

  1. Pull the chicken meat off the bones and place it in a large bowl. 
  2. Thinly slice the apples, remove the cores, and add them to the chicken.
  3. Add sliced celery, use the core leaves as well if available, and place in the bowl. Now add the pecan nuts and the edamame soy beans.
  4. Dress the salad with lemon juice and mayonnaise, season with salt and pepper, and serve!

Ingredients

  • 300 g Roasted chicken 1/2 a chicken
