FRITTATA DI PISELLI E RICOTTA- Frittata with peas and ricotta
What a fantastic way to have a family brunch with an Italian Frittata! Get your whole family around the table with this gluten free frittata recipe, this dish contains eggs, peas, onions, ricotta and Parmesan cheese.
Frittata is an egg based Italian omelette which contain more ingredients rather then just an eggs.
What are the nutritional benefits of Italian Frittata?
We love this dish which is full of goodness from eggs which are high in protein, zinc and iron. Try to buy organic free range eggs to ensure the quality is highest quality and animal welfare standards are met.
Ricotta is one of our best Italian cheeses, not very popular worldwide however this low calories cheese is used widely in Italy, from starters to dessert dishes. My wife’s favourite dessert is cannoli siciliannai con ricotta, she does not share it with anyone!
By adding vegetables to an egg frittata recipe will ensue your family receives the nutrients and vitamins as well as proteins. Why not serve this gluten free frittata with mixed salad or a side of sauteed spinach.

Italian Frittata Ingredients
- Frozen peas 400 g
- Medium eggs 4
- Ricotta cheese 125 g
- Red onion 100 g
- Parmesan cheese 10 g
- Thyme (picked) 2 g
- Olive oil 5 ml
- Salt and Pepper to taste
Let’s make a Gluten Free Frittata
- Pour the oil and the finely diced onions in a hot oven prove skillet or frying pan of about 20 cm diameter (8 inc) and sweat the onions until soft and translucent
- Then, add the frozen peas and cook until the peas are defrosted, then set aside to cool
- Meanwhile in a bowl beat the eggs with a hand or electric mixer, then add grated Parmesan and seasoning
- Add half of the egg mix to the well spread peas and onions
- With a teaspoon dollop the soft ricotta evenly and then pour the other half of the egg mix on top. This will allow the ricotta to seat in the middle of the omelette once cooked
- Place it in the pre-heated oven at 180 C for 30 minutes
Hints and Tips
If you are using fresh peas blanch them in salted boiling water for 2 minutes.
We reccommend using a non stick frying pan or skillet, if it is not available, use a normal frying pan and then decant the peas and onions in a non-stick oven tray of the recommended size.
When the dish is cooked, take it out of the oven and let it cool off for 5 minutes. Using a flat round plate, bigger size than your frying pan, place the plate on top of the pan and flip it around. Gently remove the pan which Frittata was cooked in and you will have an upside down cake style Italian Frittata!
What can i serve with Italian Frittata?
This glueten free frittata recipe will go well with side of garden salad. Nevertheless, you could add some flavour to the whole experience and make a peperonata or a Sicilian caponata and pair it with this dish!
Egg frittata recipe can be eaten hot or cold, take it with you to the picnic or you could even make a sandwich with it!

Use an oven-proof pan if available, or use a normal frying pan, and then decant the peas and onions in a non-stick oven tray of the recommended size.

How to make brunch hustle free?
Enjoy our lovely brunch with Italian Frittata, the reason I recommend egg Frittata recipe for brunch is because it is so easy to make and you don’t really want to be standing around the kitchen all day long on your day off! When we are having a day off, means we wake up later, have a light breakfast and then late lunch.
What about the in-laws wanting to visit their grandchild, unannounced!
Well, a few simple ingredients will quickly whisk away into a ricotta frittata!
Little effort will go a long way!
Don’t make it complicated, treat your guests to lovely glass of Aperol Spritz and don’t forget the children, Berry Blaster is a mocktail treat for them! Put some olives and salami for antipasti on the table. Meanwhile you will have time to make an egg Frittata with your choice of side. Finally a lovely cup of coffee for dessert with some polenta biscuits or a lovely slice of Tiramisu, all done and dusted!
