Insalata di Pollo with Apples and Pecans

Ingredients

  • 300 g Roasted chicken 1/2 a chicken
  • 300 g Green or red apples 2 individual apples
  • 200 g Celery 1/2 a bunch
  • 200 g Edamame soya beans
  • 100 g Pecans nuts
  • 1/2 Lemon squeeze the juice out for dressing
  • 3 tbs Mayonnaise
  • Salt and Pepper to taste

Instructions

  • Pull the chicken meat off the bones and place into a large bowl.
  • Thinly slice the apples removing the cores and add to the chicken.
  • Thinly slice the celery, use the core leaves as well if available and place in the bowl.
  • Add the pecans nuts and the edamame soya beans.
  • Dress the salad with the lemon juice and the mayonnaise, season with salt and pepper and serve

HINT AND TIPS:

The salad can be enriched with croutons, Parmesan shavings, and salad leaves like wild rocket. This recipe is versatile, and ingredients can be substituted to suit your needs and dietary requirements.
