- 180 g Flour
- 180 g Sugar
- 125 g Butter
- 90 ml Milk
- 60 g Dark cocoa powder
- 3 Medium pears
- 2 Eggs
- 1 tsp Cinnamon powder
- 1 tsp Baking powder
1 Dice 2 pears in small cubes, thinly slice the third which will be used as decoration and set aside.
2 Place sugar and butter (at room temperature) in a mixer bowl, whisk until a creamy consistency is achieved.
3 Reduce the speed of the mixer and add the eggs one at the time, incorporating the first before adding the second.
4 In a separate bowl, combine all the dry ingredients, flour, cocoa, cinnamon, and baking powder.
5 Sieve the dry ingredients into the butter mixture, add the diced pears and using a silicon spatula mix the ingredients adding the milk a bit at the time.
6 Pour the cake butter into a non-stick mould, decorate with the sliced pear, and bake in a pre-heated oven at 180 C for about 45 minutes
HINT AND TIPS:
It is especially important to sieve the dry ingredients to combine them evenly before adding to the wet ingredients.
Drizzle a few drops of lemon juice on the cut pears to avoid colour changes.
To check if cooked, pears the cake in the centre with a skewer, if it come out dry, then the cake is ready.
