Green beans alla Marinara

Green beans in Marinara sauce is a fantastic side dish to your meat, fish or vegetable dishes. Anchovies are the secret ingredients to this fantastic fagiolini recipe.

Ingredients

  • 300 g Green beans
  • 50 g Tomato passata
  • 6 g Anchovies fillets under oil
  • 2 g Oregano
  • 5 g Garlic 1 cloves
  • 5 ml Olive oil
  • Salt and pepper to taste

Instructions

  • In a cold frying pan place the thinly sliced garlic, anchovies and olive oil
  • Place on moderate heat and cook until the anchovies have melted, and the garlic is golden
  • Then add the tomato passata and oregano, do not season yet as the anchovies might be enough
  • Cook for a couple of minutes, then taste and adjust the seasoning
  • Meanwhile cook the green beans in salted boiling water, the timing will depend on the size, but generally it will take between 2 and 4 minutes, then drain in a colander and rest for 1 minute
  • Add the beans to the sauce and sauté until all beans are evenly coated in the sauce, plate and serve hot or even at room temperature

Notes

HINTS AND TIPS
The green beans should be al dente (cooked but with a crunchy bite still).
If using anchovies under salt, rinse under cold water removing the salt before use.
Make sure the garlic is golden, if too dark will give a bitter taste to the dish.
