Parmesan crusted asparagus is a simple recipe that showcases my favourite vegetable. Every year, coming spring I keep looking out for local asparagus, and then… Bang here they are!

- 500 g Asparagus
- 10 g Grated parmesan
- 10 ml Olive oil 2 tablespoons
- Salt and Pepper to taste
Snap the asparagus, place the tips in a non-stick baking tray.
Preheat the oven to 180 C
Drizzle with olive oil and season with salt and pepper.
Roast in a preheated oven for 10-12 minutes, shaking the tray about halfway through.
Cover with the grated parmesan as soon as they are out of the oven, the parmesan will slightly melt and crisp up on top.
HINT AND TIPS:
To make sure they are cooked, pinch the thicker part of the asparagus, if they feel soft, then they are ready for the Parmesan.
Ideally serve hot, but they are really good cold as well.
