Do I peel Zucchini?
I generally recommend keeping the skin on as it contains a lot of vitamins and antioxidants. The only thing to watch out for is if the skin is waxed to prolong the shelf life of the vegetable, it is not uncommon. Peal courgettes if you are planning to add them to salad and consume them raw. Do not peal the skin if you are using courgettes for cooking as all the bacteria and wax will dispensary during the cooking process.

How to Make Courgette side dish in under 15 minutes!
- Slice the courgettes about ½ cm thick
- Pour the oil into a large frying pan or skillet, heat up, and place the sliced courgettes inside
- Season lightly and cook on a lively heat for about 5 minutes steering regularly with a silicon spoon
- Once the courgettes are soft and golden drizzle the sugar and let caramelise for a few seconds before adding the vinegar and mint
- Evaporate half of the vinegar
- Switch off the heat, taste and adjust the seasoning, and serve

Ingredients
- 800 g Courgettes
- 15 ml Olive oil
- 5 g Garlic
- 2 g (10 ) Mint leaves
- 5 g Sugar
- 5 ml Red vinegar
- Salt and Pepper to taste
