Sweet and Tangy Italian Zucchini

Zucchini side dish is so quick and simple to make, you can have this amazing vegetarian side dish with any meat or fish main dishes. Courgettes are naturally sweet and many children will love them too.

Ingredients

  • 800 g Courgettes
  • 15 ml Olive oil
  • 5 g Garlic
  • 2 g (10 ) Mint leaves
  • 5 g Sugar
  • 5 ml Red vinegar
  • Salt and Pepper to taste

Instructions

  • Slice the courgettes about ½ cm thick
  • Pour the oil in a large frying pan or skillet, heat up and place the sliced courgettes inside
  • Season lightly and cook on a lively heat for about 5 minutes steering regularly with a silicon spoon
  • Once the courgettes are soft and golden drizzle the sugar and let caramelize for a few seconds before adding the vinegar and mint
  • Evaporate half of the vinegar
  • Switch off the heat, taste and adjust seasoning, serve

Notes

HINT AND TIPS:

Steer regularly but gently as once the courgettes will start to soften, they will tend to break
