I love to use this green leafy vegetables in many dishes, however I think using it as a side dish to any main course represents its true taste and richness.
Sauteed spinach and garlic is best served hot, nevertheless you could also eat it at room temperature if you have some left over from the day before. Preferably try to buy spinach from the farmers market where you can find big mature leaves, however baby spinach from supermarket will hold the same nutritional value.
Ingredients for garlic spinach recipe
- Spinach 500 g
- Olive oil 15 ml
- Garlic 10 g (2 cloves)
- Salt and pepper to taste

Method – how to cook sauteed spinach and garlic
- Carefully rinse the spinach under cold water.
- Removing any dirt and grit, then drain the leaves leaving just a little water clinging to the leaves
- Thinly slice the garlic cloves and place in a cold large pan with the olive oil.
- Place the pan on a gentle heat and let the garlic get to the golden colour. It will infuse the olive oil with garlic and add a subtle taste to it.
- Add the spinach and a bit of seasoning, then carefully fold with a silicon spatula until the leaves are evenly wilted.
- Cook for a further 2 minutes.
- Taste and adjust seasoning.
- Using a slotted spoon lift the spinach and place in a serving bowl.
Serve hot!
Hints and Tips
Taste the storks for cooking as they are the hardest part! You should be looking for soft texture which will melt in your mouth, no crunch needed.
For added freshness squeeze a lemon wedge on top before serving!
Make sure the garlic is golden when infusing your oil. If the garlic is too dark will give a bitter taste to the dish.
In that case i suggest to take a clean pan and start again.
